Cod Quinoto and Beldroegas - BCook Recipe

Ingredientes
- 1 loin of cod

- 200 gr quinoa

- 100 grams winners

- 4 gr coriander

- 3 gr thyme

- 60 ml white wine

- 2 garlic cloves

- 1 shallot

- 1 bay leaf

- 4 tablespoons grated cheese

- olive oil q.s.
 
Confection

 

Begin by boiling the cod loin in a pot with boiling water, with salt, pepper and a bay leaf, for 5 minutes. Lasque and reserve the cod and your broth.

2nd Then wash the quinoa thoroughly for 2 minutes and bake it in boiling salted water for 10 minutes. Drain and set aside.

3º Chop the shallot and the garlic cloves and enjoy to wash the beldroegas.

4º In a pan, heat a wire of olive oil and add the shallot and then the garlic clove. Refresh with white wine and let the alcohol evaporate.

5º Add the quinoa and a ladle of water where you baked the cod. Stir very well. Season with salt and pepper and cook over low heat.

6º Finalize, adding the cod slices and the beldroegas and let cook for another 3 minutes, on a low heat.

7º Finally, turn off the heat and add the cheese from the grated island, flavoring with chopped coriander and thyme (previously washed).
